- 2 - 15 oz. cans whole kernel corn, drained
- 2 – 15 oz. cans black beans, rinsed and drained
- 10 plum tomatoes, seeded and chopped
- 1 medium red onion, chopped
- ¾ cup minced fresh cilantro
- 4 jalapeno peppers, seeded and chopped
- 1 Serrano pepper, diced
- ½ cup lime juice
- ½ tsp. sea salt
- ½ tsp. cumin

1. Roast the corn in a pan on medium heat until golden.
2. Combine the corn and remaining ingredients in a large bowl.
3. Cover and refrigerate until serving.
