Ingredients

  • 2 - 15 oz. cans whole kernel corn, drained
  • 2 – 15 oz. cans black beans, rinsed and drained
  • 10 plum tomatoes, seeded and chopped
  • 1 medium red onion, chopped
  • ¾ cup minced fresh cilantro
  • 4 jalapeno peppers, seeded and chopped
  • 1 Serrano pepper, diced
  • ½ cup lime juice
  • ½ tsp. sea salt
  • ½ tsp. cumin
  • Simply7 Kale Sea Salt, Kale Lemon & Olive Oil or Organic Veggie Chips

Directions

1. Roast the corn in a pan on medium heat until golden.
2. Combine the corn and remaining ingredients in a large bowl.
3. Cover and refrigerate until serving.
